This Wednesday I'm having five people over for dinner. Since one is a young girl and two are men in their twenties, I decided to keep it non-experimental (although I found what looks like a *great* recipe for a spinach potato thing *g*). Since I have a batch of recipes in my larder, I thought "No problem! I'll put together my favorite quiche recipe, do something with those red potatoes I got from Costco and whip up a nice salad. Simple simple easy!"
Not so easy. I can't find my favorite simple quiche recipe anywhere. Somewhere during the move that one - and only that one - recipe was misplaced.
Does anyone have a simple all-purpose quiche recipe? One that translates well from one vegetable / cheese combo to another? That was the beauty of this recipe. All I can remember for sure is that it involved a half pound each of vegetable and cheese, three eggs, either heavy cream or half and half and I believe some onions scattered in the base of the pie crust before throwing in the veggies.
I was planning to go out tonight for the ingredients, but that ain't happenin' now, obviously.
Can someone please help me out with a substitute recipe? I'm desperate!
