I am dull... I just eat it with pita. I don't even toast it though, just soft pita. yum. it's also good as a spread; I'll put it on a grilled chicken sandwich, or a wrap with chicken and black beans. Hummus is absurdly easy to make; I can send you a recipe if you want. It's blender + chickpeas + olive oil + tahini + some spices.
tahini is sesame butter, basically. i don't know that it's butter, but it's made from sesame and is the concistency of peanut butter. or a little thinner.
Ingredients: 1 16 oz can of chickpeas or garbanzo beans 1/4 cup liquid from can of chickpeas 3-5 tablespoons lemon juice (depending on taste) 1 1/2 tablespoons tahini 2 cloves garlic, crushed 1/2 teaspoon salt 2 tablespoons olive oil Preparation: Drain chickpeas and set aside liquid from can. Combine remaining ingredients in blender or food processor. Add 1/4 cup of liquid from chickpeas. Blend for 3-5 minutes on low until thoroughly mixed and smooth.
Place in serving bowl, and create a shallow well in the center of the hummus.
Add a small amount (1-2 tablespoons) of olive oil in the well. Garnish with parsley (optional).
(I can't be bothered with making wells. I put everything in the blender and then scoop it into a tupperware container.)
That's a great basic hummus recipe, pretty much exactly what we do, minus the copious amounts of paprika Mike puts in. Lately, we've been blending stuff in as well: roasted garlic, mint, dill, jalepenos, olives, sundried tomatoes, roasted red peppers, etc.
As for dippers, I like pita or flat breads, raw veggies (red peppers, cucumbers, celery, etc.), and whole grain tortilla chips (trader joe's flax chips are especially good). Oh! And Food Should Taste Good brand makes olive chips that are perfect for hummus.
