Quick and easy pasta recipes

To stir into Hot (drained) Pasta (any shape will do):

1. 4 fresh tomatoes, chopped and a cup of blue cheese. Sounds yummy to me. I don't like cold raw tomatoes, but warmed by the pasta and mixed with blue cheese? Count me in!

*OR*

2. 6 oz. goat cheese ,crumbled with a little water to thin it out. Top with pine nuts and/or FRESH basil, if desired.

*OR*

3. In a saucepan heat 3 Tbsp. butter, 3 Tbsp. Olive Oil, and the zest of four lemons over med. heat for 1-2 minutes. Combine with the hot pasta and 1/4 c. fresh (not bottled, dammit) lemon juice and 1/2 c. FRESHLY GRATED parmesan cheese (none of the kraft crap, people). Serve with FRESHLY CRACKED black pepper.

And I know you are all more than smart enough to know that there is NO SUBSTITUTE for FRESH LEMON JUICE, FRESH CRACKED PEPPER, FRESH BASIL, and REAL PARMESAN CHEESE. But I thought I'd remind you anyway.
