The Paleo Approach by Sarah Ballantyne and Robb Wolf
Seriously appealing to the scientist in me. The author has a PhD in and studied things that actually relate to diet and disease. As I said before, the better credentials have to do with her approach.
She doesn't think her audience is stupid - so she explains difficult things in accessible terms but doesn't leave out important details. AND she says that not everything works for everyone, and she explains why. Good stuff. She includes nutrition tables (who knew meat had sugar?) for everything.
I found out why everyone says your immune system is primarily in your gut. It always irritated me that no one would say how that could be. Turns out the major producers of the cells that address threats to health are produced in the gut, the bone marrow or the lymph system, and they are all interrelated.
I got confirmation for my hypothesis that tapioca was what made me sick the last time I got sick. Turns out those nasty gluten raiders react not to the gluten but to the amino acid complexes on the gluten. In my case the ones my body doesn't like are also included on tapioca. Dang. That was going to be my one out on the Paleo diet. There is a company called "Against the Grain" that makes pizza crust with no grains.
More bad news is a diet proposed for people with Celiac disease - I can eat alligator, but no tomatoes, peppers, eggplant, no nuts, no chia or any other seeds, and etcetera. I can't even have my wheatgrass juice, All my comfort foods except the green ones are out. On the other hand, blood is OK. I found both alligator and blood at the Asian grocery where I got my beef tendons. The alligator was expensive and the blood was already cooked so I didn't get either.
I've already cut out beans and corn. Dairy goes away tomorrow. I am taking double doses of a long acting probiotic, and Montezuma's been a lot less active. I'm getting more sleep - when my light goes off at 2:47 AM, sometimes I actually go to sleep. Energy is off and on but there are too many factors for me to figure that out yet.
At any rate I will be following the recommendation of the book and doing Paleo with no cheats starting August 20. If I don't see significant improvement, I'll go on the stricter diet, called the AutoImmune Protocol, or AIP. I am losing weight or at least size - i had to adjust my climbing belt today. But the better indicator will be my test results in September.
