Last night we had the most delicious salad for dinner and I want to remember it and serve it to guests, so for posterity and future guests:
Per person:
1c baby spinach
1c arrugula
1 hardboiled egg, sliced thin
1 previously cooked sm chicken breast (we had some baked and some grilled)
1/2 large ripe hass avocado
2 tbsp Trader Joe's nonfat Balsamic vinagrette
Add leafies, avocado, and salad dressing to your large bowl and toss vigorously. You want the avocado to smush and meld into the dressing and greens. While the greens are wilting from the dressing, chop your eggs and chicken breast into small pieces and add. Serve topped with small cubes of ruby red grapefruit and drizzle with leftover grapefruit juice.
It's OMG good.

chunked blue cheese
roasted walnuts, candied
