Keeping the average alive

OK, 6 weeks of weigh ins down. The shrinking man is down another 5 pounds. 6 weeks in, 30 pounds down. Probably moving a bit faster than it should, but I am sure it will slow down soon. And this is all through decent diet, throwing out the soda, and eating sensible snacks and meals. I eat a lot more fruit and veggies than I used to. I eat a lot more healthy things than the old days when a half gallon of ice cream lasted 3 servings. Orville Redenbacher SmartPop is amazingly good for 100 calorie bags.

So tonight, the meal of the day will be a beef sirloin tip roast, herb rubbed, and served with roasted green beans.

Ingredients:
Herb rub:
Oregano
Smoked Paprika
Cumin
Garlic(minced)
Rosemary
Sage
Pepper
1 1/2 tablespoon of olive oil.

3lb Sirloin Tip Roast
Salt

1lb Green Beans
Garlic
Balsamic Vinegar
1 tablespoon Olive Oil
Salt
Pepper

1. Preheat oven to 350. Score the beef about 1/2 inch. Mix the herb rub. Salt the meat carefully. Smear the rub over the scored side of the meat. Place in a roasting pan and cook for approximately 1 hour or until desired doneness.

2. Prep green beans, toss them with olive oil, garlic, salt and pepper. Put them on a baking sheet, roast in the oven for 20 minutes, turning once in the middle.

Put on a plate and serve.
