I can give you the spring roll recipe I used: http://thepioneerwoman.com/cooking/2011/11/leftover-turkey-spring-rolls/ - I used chicken instead of turkey and then made a vegetable only version for Jeremy. It would have turned out fine if we had only had spring roll wraps - the filling is delicious. Oh, and I forgot to mention you can make a successful non-chicken version of the soup too, and it's still really good.
Ooooh, yours sounds like the best snow day as well! I kind of miss Utah midnight sledding (for some reason that was the only time I ever went). We only have the rectangular foam ones, as well, which aren't quite as good but you can still be creative with them and have fun. However, we didn't even think of using them as snowboards. Next time, definitely!
And we must have a shared snow day mindset because I was about to make snow ice cream out of our fresh snow, but remembered we still have the illegitimate child of ice cream sitting in our freezer. I was going to make it cake batter flavored, but it sounds wonderful with root beer.
