As part of my ~genius recruitment bid~ for our handbell choir, I offered to bribe everyone with cookies. So I made cookies!
...And then rehearsal was canceled due to minor inconveniences like tornado watches.
WHATEVER, I HAVE INVENTED* SNIDERDOODLES.
* Well, not "invented" so much as "made up an easier recipe and given a stupid name". BUT THEY'RE DELICIOUS ANYWAY. SWEET VICTORY IS MINE.
APPLE CIDER SNICKERDOODLES
Recipe adapted from
here. Allegedly serves 2 dozen, but I somehow ended up with 4.
For dough:
1 cup butter
1/4 cup apple cider mix powder (~2.5 packets)
1 1/4 cups sugar
2 large eggs
2 3/4 cups flour
2 teaspoons cream of tartar
1 teaspoon baking soda
1/4 teaspoon salt
Cinnamon, ginger, and nutmeg to taste
For delicious rolly coating:
1 tablespoon cider mix (~1 packet)
3 tablespoons sugar
3 teaspoons cinnamon
1) Mix butter, 1 1/4 cups sugar, 1/4 cup apple cider powder, 1 tsp vanilla, and 2 eggs thoroughly in a large bowl.
2) Combine flour, cream of tartar, baking soda, salt (I used salted butter, so I only did a dash), and spices (also dashes -- basically, until the dry ingredients smell nice) in a separate bowl.
3) Blend dry ingredients into butter mixture.
4) Chill dough (I stuck mine in during dinner -- about an hour -- and the bottom was chilled but the top was still a little melty. It was still fine to work with, though; those just came out a little crispier. And I stuck it back in whenever I wasn't using it, so it got better.)
5) Preheat oven to 350°F and chill an ungreased cookie sheet for about 10-15 minutes in the fridge. (I recommend not losing all but one cookie sheet, or else it can take a while to do more than 1 dozen.)
6) Meanwhile, mix 3 tbsp sugar, 1 tbsp apple cider powder, and 3 tsp cinnamon in a small bowl. (Also to taste.)
7) Scoop 1 inch globs of dough into the sugar/ cinnamon mixture. (I rolled these into balls first.)
8) Coat by gently rolling balls of dough in the sugar mixture.
9) Place on chilled ungreased cookie sheet (I flattened mine a little and sprinkled a little more sugar mix on top) and bake 10 minutes.
10) Remove from pan immediately.
Eat!
On the plus side, at least I'll have a snack as I huddle in the basement, waiting for twisters to finish tearing the roof off.
