Food inspiration!

Okay this is the rather tasty result of me rummaging though my kitchen for foods.

Chicken (Tenders) & Biscuits - Serves 2-4 depending

2-4 Skinless Chicken Breasts - Count on 1-1.5 Breasts per person
1-2 Sleeves of crackers, Saltines or similar type work best
Assorted Herbs and Spices to taste, you'll need a few tablespoons, this is my mix;
- Mrs Dash- Lemon and Herb Flavor
- Salt
- Pepper
- Garlic Powder
1 Egg
1/4 cup of milk
Vegetable Oil
Package of Biscuit mix (I used Cheddar and Garlic)

Prep-

Put Crackers into a one gallon ziploc baggie and crush them with a rolling pin till most of them are 1/8-1/4 of an inch in size. Toss in Herbs and Spices seal the bag and shake till everything is well mixed. Pour Mixture into a flat bowl or pie pan

Put the egg and milk into a flat bowl or pie pan and wisk with a fork till they are well mixed

Thaw your chicken, if it's not already, and cut into large pieces.

Take a meat hammer (or a can of veggies and a pan if you don't have one) and smash the chicken pieces till they are about 1/4 of an inch thick.

Set out your breading station, dip the chicken pieces into the egg/milk mixture then into the cracker breading and place on a plate.

Make the biscuits per the package and get them into the oven.

Fill a medium sized frying pan with enough oil cover the bottom almost a 1/4 of an inch you don't want enough to cover the pieces when you put them in, turn on the heat and wait for it to get hot shouldn't take more that 3-4 minutes.

Put the chicken pieces into the oil a few at a time, and cook about 3 minutes a side depending on the size of your pieces, if you aren't sure if they are done pull one out and check to see if its cooked though and adjust your time if necessary. Once everybody is cooked put them on a plate to let them rest a few minutes.

Pull the biscuits out of the oven and serve with the chicken.
