Food post!
I just got a new Tupperware Whats-It from
Meg . There was sale last month and the usually $20 or so item was $6. She asked me about getting one of the Whats-Its (pictured below cut) and I said I might but then wandered away and forgot all about it.
The Stow n' Go container (pic snagged from an ebay auction) is a kind of multi-use thing and Meg said she thought I might like to use it in bento making.
I was sold after that.
Then I got it and was all excited (please, go ahead, make fun, I sometimes want to headdesk at myself). So, finally posting some lunch pics! I have actually been taking pictures of things, just not posting. My camera died so these pics aren't the best quality.
Starting from the top: most of a Granny Smith apple in the top tray which is more shallow then the bottom, then my pizza roll up (recipe such as it is to follow), small container with ranch dressing, carrot sticks to go with said dressing, chess bar and chocolates for dessert, and grapes beside that.

Ok, pizza roll up thing. Bear in mind I just threw this together so...yeah, everything is approximate, I also toasted mine in the toaster oven at work.
Pizza Roll Up:
1 whole wheat tortilla
1 tbsp (or so) garlic hummus
1/2 a roma tomato
black olives
banana pepper rings
pepperoni
shredded cheese of choice
Italian seasonings
onion powder
garlic powder
mixed pepper
salt
red pepper flakes
First spread the hummus on the tortilla. I put it thin but I was almost out and this was 'clean the fridge' kinda recipe.
Then slice about half the tomato and place near the end of the tortilla. Sprinkle tomatoes with Italian seasonings, garlic and onion powders, salt, and pepper. I just added a dash of red pepper flakes too for the flavor but you can omit those. When I say dash I mean tiny dash, too.
Then add as many olives, banana peppers, and pepperoni slices as you want and sprinkle on cheese. Fold the end of the tortilla up, then fold the sides over, and roll into ummm...a roll. If your like me and not so good at this bit then have a piece of cling wrap or foil read to wrap your roll in so it'll stay together.
When I got to work I just put a piece of tin foil in the toaster oven tray and toasted this a few minutes with the seam up. I got mine a little crispy but I kinda like it that way.
I used the second half of the tomato and the other things I had out to make tortilla pizza at home so it baked while I cleaned up and put my lunch in the fridge.
And tonight's foods: korokke and spring rolls with my knock off peanut dip.
In college we had a dinner with my Japanese class where we had sushi, curry, and korokke. I loved them all. Sushi to a lesser extent but then I discovered better fillings.
So, I've made curry and I've made sushi but I've never made korokke.
It's a very basic food-stuff and Nanny was even interested when she heard what was in korokke (pity my poor grandparents who eat my weird foods because they love me).
Basically you need mashed potatoes, ground beef (or some type of meat), onions, egg, flour, and Japanese bread crumbs. Nanny had everything at her house except bread crumbs and I had those in the pantry from a recipe I never got to make.
After leaving work we (dad and I) stopped by Kroger and found out the did indeed carry spring roll paper and I'd been hoping to try making those so I bought it. I bought cilantro, spinach, and ketchup along with some other odds and ends, then went to Nanny's after a quick (mostly) stop at my house for some other cooking supplies.
Then sleep because I was tired. Fell asleep on couch. Woke up covered in kitties. :}
Got up, changed into a non fuzzy shirt, and me and Nanny started on the cooking. I decided to bake the korokke instead of frying them but I think next time I might try frying them later.
Basically made mashed potatoes (without adding seasonings and butter) cooked onion and my added in two cloves of garlic with the hamburger meat. Drained everything when it was done. Roughly mashed potatoes and then added the meat/onion/garlic mixture to potatoes. Mixed. Set up assembly line. First make patties/shapes from the potato meat mixture then dip them into flour, then egg, then roll in bread crumbs.

Those went in the oven and then it was time for spring rolls! First, I had no idea what the sauce was that I'd been given when I ordered this and I had gotten it to go so I didn't get to ask.
Using Google I believe it to be peanut hoisin sauce. I found a recipe and had alread brought some supplies to try making my own 'peanutty sauce stuff' so I had some of the ingredients, borrowed some from Nanny, and omitted the others.
I basically dropped a couple of spoons of chunky honey roasted peanut butter in a small pot with double that much soy sauce and added some white vinegar, garlic powder, black pepper, and chili oil as I stirred. I cut it with water a few times as things went together and ended up with a kinda spicy peanut dipping sauce. ( Will post recipe link that I loosely used as a reference when I find it.

Then I got the ingredients for the spring rolls together.
Carrots.
Cilantro, green onions.
Spinach and chicken breast cut into strips.
Then made the rolls:
I soaked the rice paper for a few seconds in warm water and out it out on top of a towel that had a paper towel on top and added fillings.
After I got what I wanted in (took me a while to figure out I wasn't putting enough stuff in) I folded the bottom up, folded the sides over, and rolled it up. It sticks to itself and voila! Spring roll!

I love the spring rolls because I think they look neat and it's a bit like holding your salad in your hand. Nanny and Pa like the korokke but were not impressed with the spring rolls. Dad liked them ok but hated the rice paper texture. So, meh, one out of two. I plan on experimenting with the rice paper now that I have it though, it was easier then rolling sushi so I was wondering if I could sushi 'pockets'.
Dad let me use his camera while I was at his house (which is why those pics are so good). I need to get a new camera but...they so darned expensive! I keep combing E-Bay hoping to find a nice, cheap, used camera but nothing yet. I'm hoping to get one that used the same kinda cards but I'm open after that.
