Cupcakes!

I have a friend who had a birthday this month, and I usually make homemade cakes for my friends' birthdays, because that's how I roll. The friend in question, however, is cutting back on sweets, so she didn't want a whole cake left over in her fridge. Instead, I made a batch of the Black Bottom Cupcakes that I made for Mother's Day. Only 12 cupcakes to a batch, so between the three of us who will be having a cookout tomorrow (well, today, actually), there shouldn't be many leftovers. My cupcakes never look as good as the picture; mine are literally black-bottomed, in that the cheesecake filling takes over the whole top of the cupcake and looks more like a frosting than a filling. Oh well, they still taste good! This recipe doesn't need any frosting, as the filling is sweet enough to make up for it. It's one of my favorites: fairly simple to make, and edible by my Dad, who has MSG-induced headaches (which means no boxed mixes).

I might update with a picture of my cupcakes later, if we take one at the cookout.
