I meant to fix some twice baked potatoes tonight. But being a clutz at times I managed to destroy the shells while attempting to scoop the guts out. So instead I took said guts and added them to left over mashed potatoes, thew them in an iron skillet, topped with bread crumbs and popped them in the oven for 25 minutes. They turned out quite tasty and went well with the steaks and dressing. I must remember that for future reference. Mistakes sometimes make the best recipes.
