Heyhey! Nice to hear from you. :D As for suggestions on what to do.. I'll have more to say about Amsterdam as I actually know the city. If you end up in Brussels all I can really recommend is eating in taverns (off the beaten track) - it's where the best typically Belgian food is to be had. Excellent especially if you like wine or beer.
With Amsterdam it really depends when you're romping about and at what time of day. The train ride between Schiphol and Amsterdam isn't such a task at least, but I hope you travel light. Amsterdam is nicest during the (early) afternoon and when you're just walking through the little streets and shopping or visiting markets and eating good food in unexpected places. Perfect if you wish to expand your knowledge of the kitchens around the world. There's even a Tibetan restaurant near the station that has truly fabulous eggrolls with no equal. I could show you around if you'd like. It really does depend on your exact tastes when it comes to more specific ways to spend your time - there's a lot to see and do.
