This is one of my absolutely favorite fall recipes, and I celebrated the first not-hot day by making the muffin version. The only thing I'd say is follow the order of ingredients; don't add pumpkin until after the flour.
Harvest Loaf Bread
1 cup butter, at room temperature
2 cups sugar
4 eggs
½ tsp ground cloves
1 tsp nutmeg
1 tsp salt
2 tsp baking soda
2 tsp cinnamon
3 ½ cups flour
15 ½ oz (whole can) pumpkin
11.5 oz bag chocolate chips
Preheat oven to 350 degrees Fahrenheit. Cream together butter, sugar, and eggs. Mix in spices and then add flour to creamed mixture. Add pumpkin and chocolate chips.
Pour 2 big loaves - bake at 350 for 1 hour or 7 little loaves for 40 minutes or muffins for 22-25 minutes.
