kale beet mango sprouted onion salad, and tofu walnut cilantro scramble

That's pretty much it.

It's largely (by volume) local, including beautiful, fresh red russian (or something very close to red russian) kale grown across the street from my place.

beet, raw (too lazy to wait for the oven), julienned (don't have a grater)lime juice

I'm so excited to finally have a bowl in my kitchen that's larger than a cereal bowl. It makes things awesome, folks.

Leftover dressing got tofu crumbled into it, with walnuts and cilantro, for a filling scramble. Yes, I forgot to put walnuts into my salad.
