Just because I was reading someone else's LJ and saw a couple of easy cookie recipes and started to leave this in a long comment there and then thought, "Hey, maybe I oughta just post it to my LJ..."

Boxed cake mix cookies! Quick, easy, and with infinite variants.

- 1 boxed cake mix, your choice of flavour
- 2 eggs
- 1/3 to 1/2 c. oil, depending on the humidity and the moistness of the cake mix (you want something that looks "cookie-dough-ish")
- 2 cups of your favourite mix-ins (nuts, chocolate chips, toffee bits, whatever)

Mix the first 3 ingredients together well, then add the mix-ins and, well, mix in. Drop medium-sized balls on a cookie sheet and bake at 350 for 8-10 minutes (they don't brown much and tend to be soft when you first pull them out). Allow to cool and harden for a few minutes before you de-pan them.

My favourite combos are

- French vanilla cake mix with 1 c. white chocolate chips and 1 c. macadamia nuts (I like pieces rather than whole nuts). These are referred to as "The Evil Cookies" among my circle of friends because they're so irresistible.

- Lemon cake mix with 1 c. white chocolate chips and 1 c. crushed lemon drops (it helps to use baking parchment for these or the melted lemon drops will stick to the pan).

- For that matter, any fruit-flavoured cake mix with white chocolate chips and crushed fruit-flavoured hard candies (Creme Savers are wonderful for this). Again, baking parchment paper is good to keep the melted candies from sticking.

- Butter pecan cake mix with some combination of Heath toffee bits, butterscotch chips, pecan pieces, and chocolate chips.

- For something you can pretend is healthier, carrot cake mix (or yellow or white if you have those sitting around) with 1 c. rolled oats (not quick oats, though) and 1 c. dried fruit or trail mix.
