coconut-mango-tapioca pudding

inspired by a punnet of mango-coconut milk pudding I had on Saturday afternoon, I've attempted to make it myself sort of mixing a couple of recipes, mainly:  http://thaifood.about.com/od/thaidesserts/r/thaitapioca.htm

I used
- 2/3 (ie 0.66) cup "seed"  or 'sago' tapioca
- 2 cups water
- 2 cans of coconut milk
- 2-3 Tbsp molasses sugar (cos i has it & want to use it up) and
2-3 tbs mango puree

What I did:
soaked the tapioca in water for 20 minutes, then drained it
added 2 cans of coconut milk & the molasses sugar
tried to bring to the boil (stirring constantly cos tapioca likes sticking to pot & burning) but it didn't reach boil, so just kept stirring approx 15 mins until it looked like the pearls were clear.
took off the heat & covered for 5 mins (in case it wasn't cooked fully) then stirred in the mango puree.

I fairly salivated over the small bowl I had while it was hot.  the rest is in the fridge chilling.

here's a pic. the colour is due to the molasses sugar & not the mango.
