Well, I think the way JKR portrayed the Death Eaters in the books was really quite shameful - they're just a bunch of sadistic, subservient, spineless - and generally brainless - thugs that took orders from Lord Voldemort. She does nothing to explain why they were feared, why they attracted people, etc - any of that.
My favorite rendition of the Death Eaters, actually, is in the Knight Errant Chronicles by guernica - as a bunch of wealthy aristocrats trying to one-up each other and take over the world. Sitting around a fire and drinking brandy (or better yet, scotch) while plotting murder seems to fit, say, Lucius' personality a lot better than randomly Crucio-ing your underlings, or meeting in dark and dank places.
But either way, I think that writing the characters as you like them is find, great even (I find JKR's versions one-dimensional). It's just that destroying/recreating a character forces a certain plotline I find tiresome..
