Dinner tonight, so I don't forget:

Rice (jasmine maybe?)
Apricot Chicken Mix (GET CHEEKIN)
Capsicum
Green beans
Onion
Bread

Also, perhaps to be getting of the apricots, so I can make it look pretty. hrm.

Yeah, I just wanted to show off my new icon.

Actually, I'm going to tell you lot about the salad I made the other night, that was cobbled together from all different places.

It contained

Diced lamb
Lemon juice
lime juice
lettuce
apple
capsicum
cucumber
avocado
onion
pumpkin
tomato
pine nuts
crutons
two different kinds of cheese (fetta and jarlsberg, this time around)
extra virgin olive oil

Right, so you cook the lamb (I didn't have very good meat available to me, but you can sear some steaks and slice them if you really want) in lemon, lime juice and olive oil. Extra virgin, if you please.

Also, steam your pumpkin. Cut it into itty bitty one third of a bite size pieces, and only take them out when they can smoosh.

Chuck all the salad together, either pre-washed or together and them wash it. I tend to do things in order, so I went :
onion - tomato - apple - lettuce - cucumber - capsicum - avocado - pine nuts. If you have a big spaghetti drainer, you can make enough to feed four and a half people.

Then wash your damn salad. I don't care if you have water left over in it, but unwashed vegetables are NOT your friend.

I chucked a dressing together using lemon juice, olive oil and a bit of salt. You can ditch the salt, if you want. Stick your salad in a bowl, get your meat off the heat and allow to cool for a few minutes, dump your pumpkin in your salad, followed by your crutons. Drizzle your dressing all around, then add the meat and toss the salad a couple of times.

ADD CHEESE LAST. So the fetta doesn't get through EVERYTHING for the people who don't like it, and the jarlsberg doesn't get smooshed.

Serve in a bowl by itself or on a plate. You can also make this with eggplant instead of lamb for a vegetarian version. Just slice your eggplant and brush over with the lemon and lime juice while searing them on either a grill or bbq.

SO YES. THAT IS MY SALAD. I GO NOW.
