There's a pretty hilarious Captain's Log entry while they're captured, which apparently Kirk just makes with his mind.

Self-advertising! He wants everyone to know - the next, post-Saved-The-Day day when it's all over and he's long gone - that Gary Seven Was Here. Once enough people know about it, he'll move on to transparent variations and silly puns on his name, a la the Master, and eventually he'll have to give it up entirely (a grey day).
And you just know Garys One through Six would've made wacky guest appearances throughout the run, like Samantha's two dozen drop-in relatives on 'Bewitched'.

I guess so. There are actually several episodes where he begins with something like, "Captain's Log, Stardate, unknown. Currently being held in a dungeon with my first officer, our communicators and phasers confiscated. Must find some way to escape." Other rimes we actually seem him recording his log in the arm of his chair. It's pretty strange.
