More fabulous quinoa!

Modified Huevos Rancheros
1 c quinoa
Chicken broth
6 eggs
1 jar salsa verde (I use Jemez from the Mexican section of the international aisle)
Sour cream
1 bag or ~2 c shredded cheese

This serves three people. If you're cooking for yourself, just split the ingredients.

1. Cook up a cup of quinoa in chicken broth (or veggie broth if you prefer). While it's cooking, fry six eggs in a little butter. I used some seasoning mix - just the generic equivalent of no salt Mrs. Dash. You can use salt, pepper, whatever brings you joy. You also want to heat up the salsa in a saucepan.

2. Once the salsa is warm, mix in a couple large spoonfuls of sour cream. Stir until it melts.

3. Dump the quinoa into a casserole dish, then the eggs, then spread the cheese on top. Put it in the oven or under a broiler for a couple minutes until the cheese melts.

4. Serve with whatever toppings you want - more salsa, more sour cream, tomatoes, lettuce, jalapenos, whatever! You can wrap this in tortillas if you want, but the quinoa makes it a healthier, low cal alternative.
