Recipe 12: Rice Krispie Squares
No, I haven’t forgotten about this. Among other things, it’s been too damned hot to cook until recently, and I’ve been living on cold sandwiches, yogurt, and salads. And takeout pizza, if we’re being honest here.
These are so simple I almost think they don’t count as cooking. And cheap - Bill-Paying Roommate and I used to make these for a treat when we could scrounge up enough change during the Really Really Broke Phase to buy small boxes/bags of the (usually knockoff ingredients.
Rice Krispie Squares
Ingredients:
1/4 cup butter
4 cups marshmallows (about 40), plus one or two to test for quality. :P
5 cups Rice Krispies, or knockoff rice cereal
Equipment:
Large pot (I use a dutch oven, which is probably too big, but melted sugar and I have a long and messy history so I’m careful.)
Measuring cup
Spoon
Square baking pan
Instructions:
Grease the baking pan and set aside. Melt the butter and the marshmallows together over low heat until the marshmallows are completely dissolved. Don’t let it caramelize. (Or, if you do, pretend you meant it.) Add the cereal and stir until thoroughly coated in the marshmallow.
Pour/scrape into the baking pan. Try to get it as flat as you can, but don’t worry about it too much yet. It’s going to stick to everything until its cooler, so just leave it while you take care of what cleanup there is (if you’re organized) or yell at bad science in an old episode of Doctor Who (if you’re me). After about five or ten minutes you’ll be able to pat it down without it sticking to everything. Let cool completely before cutting.
