I enjoy cooking, it can be really fun, and it is also the best way to eat good food. I can buy a can of soup with an ingredient list I'd rather not think too much about, or I can make a pot of better tasting soup in the slow cooker or on the stove. depending on the soup I can often make several times as much for the same price.
I'm not a recipe person, I can follow them but prefer not to for the most part. Most often when I make soup it's a simple matter of throwing in a suitable set of ingredients and letting it simmer. This is a great way of using up vegetables that need using. I call it 'peasant soup' and have jokingly asked my daughter to go out and get me a peasant to throw in the pot.
I'll make my own soup stock, a simple task if you know what you're doing. All you do is put suitable stuff in a pot with water and let it simmer for a while. Most often it will be chicken or turkey broth, since I like to roast up whole birds and use the bones. Bones, onion, carrot, a bay leaf and possibly some other seasonings. Celery is generally recommended, but I don't like the stuff and as a result don't buy it.
Like french onion soup? I make a reasonable approximation by cooking meat and onions with plenty of water in my slow cooker. Serve the meat with dinner, and put a slice of bread and some of the onion broth in an oven proof bowl. Top with shredded cheese and bake until the cheese is browned.
