You get to go to carowinds?! meh ;p Lucky! Fun fun.
Here's something for the schedule: Mid August before school starts - Visit Ellen. *nods*
Uhm... What else for ideas of what to do?
Cooking? Cooking can be awesome and fun and fill up hours of a day, depending on what you're preparing, that is. I take great pleasure and leisure in crafting dishes for a 7 course meal every friday night. And the good thing is that so much food as leftovers can be eaten for a couple more days so you don't have to worry about cooking or scrounging around for food then. And you can make it all healthy. If you REALLY wanted to get all into it you could try to sculpt it and present it in such a way that it looks all fancy and gourmet on the plate. Then invite Katie and David and the parents and whoever else to come partake in your feast.

Go visit the zoo. The Asheboro zoo is one of the TOP in the whole country for good space, habitat, and care of its animals. I think I recall reading somewhere how it was amongst the top 3 zoos in the country for the above mentioned criteria.
Clean house. I know that sounds crappy, ...but if you put in some good tunes and just get to sorting and organizing, it can be fun. I usually dislike the more "blah" chores of washing a ton of dishes right after cooking, or vacuuming up ass-loads of cat hair from the carpet, and so forth... But when it comes to just sitting and organizing and sorting through things and putting them in their place... I really enjoy that, oddly enough. Of course last time I checked, you're not me... so you might have a different preference on the matter, but..... its just a suggestion anyways.
Write more songs. Practice singing them. And no worries about if you might change the tune around each time you sing it.
Go buy some plants from somewhere, preferabbly perennials... And not ones that will "take over" and push out native spieces. Then go find somewhere you think could use some plants to beautify, or bring to life, or support life, (Be it a park, or the yard, along a forest/hiking trail, or along the road somewhere even...) and go plant them.
Take a day to get up early enough to go watch the sun rise And be sure to watch the sun set at the end of the day.
Make your own board game to play with people. A simple starting idea would just be your own themed monopoly I guess. Like I was once working on a "veganopoly" and the playing pieces were going to be little plastic farm animals, and instead of "get out of jail free" passes there were going to be "escape the slaughter house" passes or something. And instead of houses and hotels they were going to be 'rescue shelters' and 'farm sanctuaries'. lol I never got it done though... so if you'd wanna pick up on that. Or make up your own. Or invent a whole new board game all together. You could go to a thrift store and try to find and old/used board game and then take the pieces out of it, including the board, and customize it as you'd need it for whatever game you invent. Instead of an "altered book" you'd be making and altered game.
I know all those ideas arent exactly things to occupy your entire day or anything... But I was just trying to help, and cure any boredom that could sink in when you don't have anywhwere right off the top of your head to be going.
Lucky!
Fun fun.
