Wow! I have responses mainly to the things you didn't like:
1. This may just be how she acts when she wants someone to work WITH her? Maybe she seemed cheerful because she was actually going in to get a person she cared about, rather than being focused on revenge? I'm gonna have to determine the correct chronological order for all the Fairytale Land flashbacks eventually.
2. I guess I was just expecting him to stay exactly as he was introduced in the beginning of the episode-- you know "he's mysterious with a heart of gold and he loves his daughter more than anything and he's pretty damn dumb when it comes to being manipulated, are you shipping him with anyone yet?", and so was pleasantly surprised when he started acting real-world-level nutty and being a creeper and everything. Although I'm quite sure he was only watching Emma, and only because she was changing the town. It just looked like he was a creepy pervert dude.
As to the thought: I think them's the breaks with fairy tales. Female characters are coupled with romance. Let's not forget that the three main characters of this show are women, pretty kick-ass women, and most of the male characters are secondary at best.
5. That's silly. Why would they assume the hat was a working portal? They think Jefferson was insane. I'm hoping the hat was just used to introduce the 'multiple worlds' idea. I'm hoping there will be non-hat ways to travel between worlds.

2. I don't know whether it'd be better to hope that they never do anything more with Wonderland, or hope that they revisit it. Notice how they left plenty of room for Alice's story? I didn't notice that right away.
Also you know the biggest issue I have with the Tim Burton one is how he just like took the Wonderland trappings and slapped them on a generic fantasy hero story. It did not fit.
...I'm assuming that he found the hat and how to use it, somehow. And out there are other ways to travel between worlds. Wardrobes for example. And if you look at screenshots, the other doors looked really clue-like. One was very green and looked like an Oz door, one had hieroglyphs, I think I saw a Narnia-like door... so yeah, I hope it goes the way of Fables and has multiple worlds based on various stories and myths and legends. (I have been looking up steampunk clothes again, and--what if there's a steampunk world based on the works of Jules Verne and so forth? that would be the best.)
3. I am assuming that she thinks she has control over him, but he's still pursuing his own agenda whatever that may be. He's probably working for her on the surface, but exploiting loopholes and carefully setting things up to his liking.

I guess you're surprised by how many comments I had? I like discussing TV.
1. I guess? Regina is just so weird. She has pretty much one emotion and that's stone-cold pissed. So when she shows casual friendliness to random people I find it confusing. I excused her behavior toward Rumple because I figured they were frenemies and she was just hanging around to rub it in, but this makes no sense to me.
2. Yeah, but I was disappointed that he wasn't actually crazy. Anyway, he wasn't just watching Emma. He was also watching Grace/Paige, and he'd been watching Emma enough to know what Mary Margaret was up to; I think he must have been watching Mary Margaret as well while Emma was gone. I'm guessing we'll see him again since his story didn't really tie up well, and I liked him better toward the end of the ep, but he just didn't rouse any real sympathy or fear in me.
Re: the thought: that's true, but this show has taken great steps to take inspiration from fairy tales without staying married to them, so maybe the next girl they showcase they could remove from the romance completely. Boys have adventures, girls have romance. Maybe we should shake that up. (I know it's unrealistic to expect it to just happen; it's wishful and somewhat irritated thinking.)
5. Obviously I forgot that so far the magic world and the real world have yet to cross paths. The hat was just sitting there in the car and it turned into Prisoner of Azkaban in my head with a hat instead of a time turner. I don't know. I assumed they would examine the hat, and discover it was a magic tornado teleporting hat. Clearly I was wrong.

I maintain that exploring other fantasy worlds will be interesting, and given their treatment of the Court of Hearts (and the fact that a lot of things were set up in the ep with no conclusion), I'm figuring we'll see it again and that it will be more than a replica of the Burton version.
Actually, I got so excited about it that last night I dug around for my more recent Fables comics. They did a GREAT treatment of Dorothy in a miniseries spin-off, and Ozma has shown up, and several others are visiting Nome King-occupied Oz. It's interesting! I fervently hope for similar with OUAT. (Even though, like I said, I think Oz is more interesting than Wonderland.)
STEAMPUNK WORLD WOULD BE BEST, YES.
I wish I could remember more of the other kingdoms in Fables. There was the Land of Rus, the Arabian Fable country (later called Fabletown East), the Cloud Kingdoms, Oz, plus more in Jack of Fables that were less kingdoms and more literary derived, uh, places? I don't know, JOF was weird. Alice made a few appearances in JOF but at a place where fairy tale characters are imprisoned, so maybe Wonderland was destroyed before the Adversary?
...I should stop comparing OUAT to Fables. It's just soooooooo good!
3. Well, that's the thing, we don't know what he's going on or what his agenda is and that's what I'm curious about. I'm guessing you're right, but he's got something going on that's never been clear to me, and I'm assuming at some point the queen will decide to take him out of the game by threatening him with Belle.
4. Okay, no. What I meant was A) their costumes were Victorian styled because the characters were derived from a Victorian story, and/or B) their costumes were Victorian styled because they were derived from the Disney version, which was an interpretation of a Victorian story.
