New food post!
I've tried this recipe for Tofu Spinach Lasagna before but today was the first time I added some vegan cheese, which is made from cashew nuts, miso and yeast. The result was great! The vegan cheese, although not quite tasting like dairy cheese, made the Lasagna much tastier. Also, it browned in the microwave and made the dish look "more authentic."
I'd definitely make it again. I've got lots of "cheese" left over anyway. =)
