Soup's on the menu next week so I spent some time today making a batch of vegetable stock. My recipe uses 9 different vegetables and the stock ends up strong enough to drink as a soup, really, and it gives anything I make with it after that so much flavour!
Sometimes I feel it's a waste though, because I throw the vegetables away after that. They end up mushy and tasteless after the boiling. I read somewhere that people blend up the vegetables to make patties but that sounds a little gross!
