Vegan Peanut Butter Cups

These are unbelievably tasty (even if you’re not vegan, I promise - I’m not) and super easy to make. Warning: Eating more than one in a sitting is not recommended unless you want a tummy ache! They are extremely rich.

* 1/2 cup vegan margarine
* 3/4 peanut butter
* 1/4 graham cracker crumbs
* 1/4 dry sweetener
* 1 cup vegan chocolate chips
* 1/4 cup soy milk

Melt margarine over medium heat. Once liquefied, stir in peanut butter, graham cracker crumbs, and sweetener. Spoon in about 2 tablespoons of peanut butter mixture into muffin tins lined with paper liners (these are important!). Melt chocolate chips and milk over medium heat until completely melted. Spoon over top of the peanut butter mixture. Allow to set in fridge for 6-8 hours before serving. Makes 12.

Note: If you don't want to do this the vegan way, I'm sure they will taste just as delicious with butter, and regular chocolate chips and milk.
