My inner 3 year old is throwing a tantrum. Not terribly unusual, it happens every few months. I'm trying to ignore it.
I made blueberry pancakes and blueberry syrup this weekend. NUM! Okay, for the syrup I did this:
Blueberry Syrup
1/2 C Blueberry Acai Juice
1 C Light Corn Syrup
1/2 C Wild Blueberries
1 C White Sugar
Blend blueberries and juice in a blender. Put in medium saucepan and bring to a boil on medium high heat. Add Corn Syrup and Sugar. Boil 3 minutes, stirring often and making sure it doesn't boil over. You may need to reduce the heat! Let cool and put in an airtight container. Store in the refrigerator. You will probably want to warm it up a little before serving. I put it in the microwave for about 1 1/2 minutes on very low power.
For the pancakes, I just used Krusteaz pancake mix, used milk instead of water and added some vanilla and about 1/2 C of blueberries to the mix. (I made enough batter for 4 people.)
