Aradia is a low blood troll so she's resistant to mind probes and is an immortal goddess of time manipulation so i don't even know why you would want to. She is obviously not human.
Aurica is hooked up to a machine that is hooked up to her planet's power system. Elf can notice that but anything deeper will result in her brain getting utterly fried by that system. She will get a warning, in the form of a bear with a ridiculous accent, telling her that Aurica doesn't trust her. However, if Elf can get Aurica to trust her, then Aurica is ridiculously weak to mind control.
Elliot's memories are a bit of a mess. He had something horrible in his mind suppressing anything that made him upset with the resulting side effect of it eating his soul, and this was put in there against his will. Elliot will not notice if she's reading his mind, but any effort to make him do something that is against his moral code will be met with ridiculously fierce resistance. He's just ... insanely stubborn. It's how he rolls.
Hope got touched by a godlike being thingy that did things to him to turn him into something more than human. Technically he should not have these powers but we gave them to him anyway because camp did it and we're waiting for the sequel, okay. He has no shields and could be controlled, though honestly I am not certain about the connection between his crystal and his consciousness. WHO KNOWS. :')
Julian will yell at her to get out of his head, and will resist anything that goes against his moral code, but he is more easy to roll than Elliot and Ronan. You know his canon.
Luca can be rolled pretty easy, but there's a god sleeping in the back of his mind.
Luke is SO EASY to control, most people do it at some point during the game. He is also telepathic in the sense that if someone contacts him, he can respond but he also falls over, starts glowing and suffers debilitating migraines so sure, why not.
Ronan is a magical snowflake and can't be controlled. :)
