Wow, you know what? Skipping that delayed movie this morning was the way to go. We're having a little dinner party tonight and have spent the day in a cleaning frenzy. There's no way I'd have had that energy after sitting on my ass for 2+ hours. At least I got the carpet shampooing done yesterday, I'm beat!

this might sound a bit odd but what was the fish you served Justin? He actually liked it. He doesn't usually like fish and I love seafood so I'd love to have the recipe.

Not odd at all! I believe I served two kinds of tilapia. One was crusted with a chipotle/tortilla/lime crumbles mix, and the other was panko battered. Both come fully cooked from Costco and just require 20 minutes or so of oven time.

Yeah, our problem with fish is how to season and prepare it properly, and this takes care of both!

I'll have to try and mock up the tortilla one. The closest costco is 70 miles away and I'm not that dedicated to them. I had an amazing scallop this past weekend, they made these phyllo dough strips and used that to keep it crispy and sauteed it. Thanks though:)
