The average pore diameter in a cookie is equal to four times the viscosity of the hot liquid, multiplied by the height of the liquid rises squared, divided by the surface tension of the beverage, multiplied by the length of time the cookie is dunked.
So you work it around so that you can determine when the pores are filled I guess. The scientist who worked this out said the optimum for digestives in tea is 3.5 seconds.
