Mango and Avocado Relish with Cilantro
  • 1 avocado
  • 1 mango
  • 1 lime
  • .5 red onion
  • a handful of cilantro, leaves only
  • a pinch of salt
  1. Chop mango in large dice. Chop onion in small dice. Dice cilantro leaves. Juice lime, and toss mango, onion, cilantro, salt, and lime juice together in large bowl.
  2. Remove avocado flesh from peel and pit. Chop in large dice. Carefully fold into the mixture in the bowl.

If you have any questions about getting the mango or avocado out of their respective skins, let me know. They are both easy once you know the trick.

This is really good with grilled salmon, but also yummy on its own. If you want to make it an arranged salad, cut the avocado and mango into julienne, slice the red onion on a mandoline or as thin as you can, and make an artful stack sprinkled with the cilantro and drizzled with lime juice.
