Week 2 Meal Plan

In accordance with the "exchange" style of eating with the following:

2.5 proteins
4 veggies
3 starches
3 fruits
1 fat
2 dairy

Here is a meal plan, which I created for my mother for the week. Mom likes to have yoghurt at night. Recipes available upon request. I'm going to go chop veggies for an hour now...

Tuesday:

PB & apple, English muffin

1 c Minestrone soup

Strawberry banana smoothie with 1/2c fat free soymilk, ice to taste

Jerk chicken with rice

3/4c fat free yoghurt

Wednesday:

2 eggs (egg replacers) with mushrooms and/or spinach (1/2c)

~15 grapes with 5 crackers

Rainbow Salad with tuna or other protein and 2 slices bread

Mango pineapple smoothie with 1/2c fat free soymilk, ice to taste

Steak + Onions with Ginger Carrots

3/4c fat free yoghurt

Thursday:

1 1/4 c Fibre One with 1c fat free soymilk, 1 banana

1/3 c Spinach Artichoke Dip and 1/2c salmon with 2 Ryvita

Raspberry Turkey with Mushrooms and 1/3 c pasta

Small orange

3/4c fat free yoghurt

Friday:

PB & apple + english muffin

1 c Spinach Soup, 2/3c pasta and 4oz chicken breast

Beef Teriyaki

Stuffed Baked Apple

3/4c fat free yoghurt

Saturday:

2 eggs (egg replacers) with 1 c veggies

1 1/2 c Fruit Salad

1/3c Spinach Artichoke Dip, 3oz salmon, bread for dipping

White Chicken Chili

2 yoghurt

1 - 4oz cocktail or small glass wine
