how could i have not been i love with food all my life? i fucking love it now, and i will be a chef and open my own restaurant. i didn't even know how to make a decent soup until i was... 20? 19 maybe? nd now i can say that - the dish we presented in austin tonight... i could easily make that without even watching him make most of it.

boil lamb legs for about 6 hours with carrots and onions.
strain out stock, pull lamb meat into shreds off the bone (should be easy) and set aside.
put bones back into stock, reduce by 1/2 or so.
drizzle pulled lamb meat with honey and diced mint and mix thoroughly by hand.
with yogurt, water, cream, (diced jalapenos would be my secret ingredient here), lamb stock, and some sort of curry-- make creamy yogurt curry sauce.
toss lamb in curry sauce, serve in lettuce wraps with caramelized bulb onions and blanched carrots.

not that hard.

my new, unorganized, not that amazing of a chef, supposedly pothead boss gives me hope... :)
