KH I can take or leave...it has the novelty factor of combining Disney and Final Fantasy characters in a winning way.
FFVII is something you should play (now FFXII...that is its prettier but less cool cousin). It is seriously my favorite game of all time (at one point it really made me cry) because it has complex characters who are nearly all developed and a good plot. It also has some awesomely dorktastic moments (you have to snowboard, crossdress, and race on giant birds known as chocobos at various moments). And Cloud himself is a fascinating character...I've replayed that game several several times, doing all the side quests and spending copious hours and I don't get bored at all. Yeah, there are action sequences..but they aren't gratuitous and if there are any that don't relate to the plot, I can't think of them off the top of my head.
And, yes, character development. Each character has a sizable chunk of game devoted to their backstory.
Final Fantasy X, while not as epic in scope or scale as FFVII (IMHO), is still very good both in terms of plot and character development. I genuinely love some of those characters and there are moments when I was genuinely taken by surprise by some plot twists (not in a "what the heck this is out of the blue!" way, but in a...I should have seen that coming because I am genre savvy! way).
FFVII or FFX have my votes for the starter games. I know FFVII can be played on an emulator, but I'm not sure about FFX. Depending on your taste, VII is a more gritty, futuristic urban story and FFX's world is largely based on Okinawa and the game is a bit more intimate...while for some reason it is not as well loved in the franchise, FFIX is also a good game. The characters are enduring and it is more old school in that it is set in a quasi-medieval European world with a bigger emphasis on job classes. But, despite its look, that game has a pretty dark story line and some characters that will just break your heart (and one who fights with a fork and eats monsters...but that is an entirely other manner). I don't recommend VIII if you are looking for story and character development. It has interesting ideas that don't come off for the most part. XII and XIII I have never played.
But, yeah. Honestly, I play the games for the story and the characters.
Also, math is evil. But do your homework ahead of times because you will get into trouble eventually...not that I have done that *cough*.
