White Chocolate Cranberry Cookies

I suppose today is just "one of these days". I know they come and go and still they leave me so frustrated with myself for being... well... mostly frustrated with myself (oh hi vicious circle, didn't see you there), I guess. I've mostly been wandering around at work, getting coffee or tea or water or whatnot.
I've been (or possibly still am... not sure) very tempted to go away for a day or two over the weekend but I can't even make up my mind about where to go and what to do because the sole reason would be, well, not to be here. Amsterdam, The Hague, London, Brussels? I'm not sure.

Mind you, good stuff: White Chocolate Cranberry Cookies

These babies were divine! Not to praise myself here, after all this was a fairly simple recipe, but these cookies are amazing. =) 
I snatched the recipe from Kim, as usual, and didn't change much -- except for refrigerating them over night because the dough being too runny is a fairly common problem with my cookies, probably because I melt the butter completely as I mix the ingredients by hand.

Ingredients

1/2 cup butter, softened
1/2 cup packed brown sugar
1/2 cup white sugar
1 egg
1 tablespoon vanilla
1 1/2 cups all-purpose flour
1/2 teaspoon baking soda
3/4 cup white chocolate chips (ca. 110 g)
1 cup dried cranberries (ca. 175 g)

Preheat oven to 375 degrees F (190 degrees C). Grease cookie sheets.
In a large bowl, cream together the butter, brown sugar, and white sugar until smooth. Beat in the egg and vanilla. Combine the flour and baking soda; stir into the sugar mixture. Mix in the white chocolate chips and cranberries. Drop by heaping spoonfuls onto prepared cookie sheets.
Bake for 8 to 10 minutes in the preheated oven. For best results, take them out while they are still doughy. Allow cookies to cool for 1 minute on the cookie sheets before transferring to wire racks to cool completely.
