Once again, no measurements...I'll learn one day, I swear.
jar of peanut butter (I used chunky)
lime juice
garlic
scallions
soy sauce
brown sugar
sesame oil
chili oil
chicken broth to thin the sauce (you're supposed to use coconut milk, but I forgot it at the store)
Mix all ingredients except the PB and broth (or coconut milk) in a bowl, set aside. This is also a good time to taste it, especially given the whole no measurement thing.
Heat small amount of peanut (or canola) oil in pot over medium heat, sweat garlic and scallions until soft. Add peanut butter, heat until smooth, then stir in soy sauce mix. Add broth (milk) until sauce is desired consistency. Toss with noodles; add meat or veggies as you please.
