Nothing much going on...work sucks, men suck, i'm sure a lot of you girls can relate....but i do have one good thing that is optimistic...i came across this pretty good recipe for dip I'd like to try...but instead of sausage I'm thinking of substituting chicken instead i'm not too keen on sausage that much, or maybe just leaving it out all together but I don't want to take out that little kick...I don't know I'm open to suggestions to people who are real cooks lol.
Queso Fundido

The classic name (pronounced KAY-soh fuhn-DEE-doh) means melted cheese, but spicy seasonings make this dip much more than that. On a hotness scale of 1 to 10, this is about a 7.
Ingredients
2 ounces chorizo sausage
2 cups shredded sharp cheddar cheese (8 ounces)
1 cup shredded Chihuahua or Monterey Jack cheese (4 ounces)
1/2 cup light dairy sour cream
1 4-ounce can chopped green chili peppers, drained
1 to 2 tablespoons finely chopped, canned chipotle chili peppers in adobo sauce
Chopped green sweet pepper, chopped and seeded tomato, and/or sliced ripe olives (optional)
Tortilla chips

Preparation Bake:20 min.Prep:10 min.
1 In a small skillet cook sausage until thoroughly cooked. Drain well on paper towels.
2 In a large bowl combine cheeses, sour cream, and chili peppers; stir in cooked sausage. Spread in a 9-inch pie plate, 9-inch quiche dish, or 1-quart au gratin dish.
3 Bake in a 375 degree F oven for 20 to 25 minutes or until cheese is melted and bubbly, stirring once. If desired, top with chopped sweet pepper, chopped tomato, and/or sliced ripe olives. Serve immediately with tortilla chips. Makes 8 appetizer servings.
