Holiday Puffed Egg Nog Pancake (off the back of my egg nog lol)
- 6 eggs
- 1 1/3 cups Egg Nog
- 1 cup flour
- .75 teaspoon of nutmeg
- 1/2 c butter/marg
- 1/2 almonds (optional)
- fruit flavored syrup (optional)
Preheat oven to 425F, mix eggs in a large bowl with electric mixer, add egg nog, flour and nutmeg. Mix until blended, the batter should be slightly lumpy.
Place butter in a 9x13" baking dish, place in oven until melted and sizzling, not browned. Remove from oven and add batter. Sprinkle with almonds. Bake in middle or lower third of oven for 15-20 minutes or until puffed and golden.
