As my Christmas gift to you, I would like to give you this recipe. I made those cookies on Monday (along with 2 other recipes) and they are just awesome for ginger lovers.
Beat together until fluffy:
3/4 cup butter
2/3 cup brown sugar
1/4 cup molasses
1 egg
1 1/2 tablespoon fresh minced ginger
Stir together:
2 cups flour
2 teaspoon baking soda
1/4 teaspoon salt
1 1/2 teaspoon ground ginger
Stir flour mixture into butter mixture until well combined (you can use your hands if necessary.)
Refrigerate at least 1 hour.
Roll 36 little balls in hour hands.
Roll the balls in this mixture:
1/4 cup sugar
1 teaspoon ground ginger
Put unto parchment paper-lined or greased baking sheets.
Bake for 8 minutes at 350F.
