It's Moms' Day. Go tell your moms what you think of them. I made mine some cookies.
In a small bowl, combine:
2 c. flour
1.25 c. oat bran
0.5 tsp. salt
1 tsp. baking soda
0.5 tsp. ground cloves
.25 c. cocoa powder
dash of chili powder
In a larger bowl, beat together:
2 sticks butter (softened)
0.66 c. brown sugar (light or dark)
0.34 c. white sugar
After those are mixed into a good paste, beat in two eggs, one at a time
2 eggs.
Then beat in:
0.5 c. low-fat vanilla yoghurt
Fold in the flour/oat bran mixture, and when reasonably smooth, add
2 c. chocolate chips.
Drop onto lightly greased or oiled baking sheets, roughly 1" diameter blobs. Bake for 10-15 minutes at 350 degrees F. Cookies are done when they look "dry" and do not glisten. Take off the sheets when still rather hot and let them cool on wire racks. This keeps the cookies relatively moist.
These are probably the healthiest cookies I've created. Oat bran = yummy.
