srsly_yes post. Anyhoo, I was lamenting the loss of Nutella in my life since becoming vegan. So we made a vegan version Sunday night. And holy hell, it's so freaking good I can't. stop. eating. it. So I decided to make Vegan Nutella Cheesecake Bars and bring them to one of my workplaces tomorrow.
I need to share the recipe because it's so good:
About 2 cups of hazelnuts
Tbs. or so, agave syrup (or some other sweetener, but a liquid one helps keep things *smooth*)
1/4 cup of cocoa
1 tsp-ish of pure vanilla extract
1/3 cup of almond milk
Dash of nutmeg
Roast the hazelnuts for like 8 mins, rub off the skin, then put them in a food processor till they're ground up pretty fine. Then add the other stuff, process until it becomes ... Nu-fuckin-tella.
*** And if you're interested in the cheesecake bars (they're cooling, and I don't actually know how they are yet):
Process Oreos (OMG, House/Wilson) w/melted Earth Balance spread (or butter, if you're not vegan); half-a-stick-ish of the margarine or butter with however many cookies lets you make a crust for an 8x8 pan. Bake that crust for like 10 mins at 325 degrees. NOTE: Oreos are vegan! I used the Newman O's version, though.
Filling:
2 containers of vegan cream cheese (or regular, 16 ounces)
About 1/4 cup of firm tofu (or heavy cream, if you're like that ;) )
About 1/2 cup sugar
2 eggs if you're not vegan (about 2 Tbs of cornstarch if you are)
Vanilla extract
Little lemon juice
ETA: Forgot the Nutella! -- about 1/3 cup
Process everything till it's smooth like silk. Put 2/3 of the filling on the cooled cookie crust. Mix the remaining 1/3 with the Nutella and lay that layer on top. Bake for about a half-hour. Cool in the fridge. Once it's set, you can pull it out and cut into cheesecake bars. Sweet lord.
