I LOVE coriander, and the lime and mayo and coriander together is so tangy and fantastic. It's a great recipe because it's so easy to make and you can very easily adjust the quantities to make extra. They can be eaten hot or cold, cooked inside or outside on a bbq.
Coriander is great - I add it to salads a lot for some extra flavour. I'd probably use that mayo combo on a salad - it'd make a change from honey and mustard that's for sure.
I was thinking how adaptable this is, especially having it cold. If I was having a bad day and couldn't really stand to cook, I could use a pre-cooked chicken breast on this and cut some slices to make it thinner. All I'd have to do is mix up the mayo and cut the lettuce and I'd be done.
Defo going to try this for dinner tomorrow I think. Just need to see if I can get some vegetarian bacon, since I don't eat pork. And I might have to be creative with the bread - my local store doesn't stock turkish bread rolls as I recall.
You could definitely do without the bacon, maybe use a piece of chicken breast with the skin on instead. It's really the crispiness of the bacon you want so if you've got crispy chicken skin that would work too.
It's not as good with other types of bread. I made it with ciabatta rolls when I was in Holland because I couldn't find Turkish bread and it wasn't quite right. But it's still yummy.
