The complexity of figuring out dinner.

On a far less dramatic note, I decided that I would be the one to make dinner tonight. BF did the other night, J did last night, so I figured I should take a turn. The problem that comes with this is that I'm dealing with two people who are relatively to terribly picky eaters. And I'm not. So, I decided on an idea that BF (who I believe is the pickier of the two) would eat, and then I decided to text J at work and check with him on a couple things that I wasn't sure of his feelings on -- and he replied yes to one and mentioned nothing about the other, so something tells me I'm back to square one. (Yep. Looks like the answer is uncertain enough that it's better to not go there.)

BF sometimes likes to say that he's the cook and I'm the baker. I'd probably cook more often than what I do if he would eat most of the stuff I'd like to make. BF is a very basic eater. On rare occasion I can get him to go for Chinese food, but very rare. Mexican is out, because spicy is out, and although not everything Mexican is spicy, there's this idea in his head that everything Mexican is spicy. He won't eat bell peppers because he seems to think that they'll be like jalapenos or something. As much as there are certain things he simply can't eat, because of the way they work with his digestive system, there are also lots of things that he won't eat because of some sort of psychological block like that. "Pepper" is a spicy word in his mind, and thus, no pepper isn't spicy. J seems to be a different sort of basic eater; just feed him meat and potatoes and he's content.

So, on the one hand, cooking for them could be relatively simple, since relatively simple meals will keep them happy. On the other hand, I want something different. I get bored of chicken parm... and honestly, of chicken in general. And pork. BF doesn't do red meat. J will, but that doesn't help me much for a meal for three people to agree on. So I was thinking I might try a peachy chicken with rice and veggies, because it sounded like it would be good, and it would at least be different enough to satisfy me as well. I guess J apparently doesn't even know if he likes peaches. (Whaaat?) I probably oughtn't risk it.

Does anyone have any suggestions for less "routine" meals that I might be able to work around some picky eaters? lol I need some sort of variety in my diet!
