NaBloPoMo, day fourteen: Cinnamon bread.

Today I am recommending a recipe for cinnamon bread, which is as delicious as it sounds. I got this recipe from Kelly (she came up with it, because apparently she is awesome enough to do things like that, I don't even know) and have made it twice so far; each time, it's been awesome, so if you like to bake, definitely try it out.

Sweet Cinnamon Bread

Ingredients
- 1 c. water, 105-115*F
- 2 tbs sugar
- 2.5 tsp (1 packet) active dry yeast
- 1/4 c sugar
- 2 tbs cinnamon
- 1/2 tsp salt
- About 3 c. flour (I use unbleached white for this)
- 2 tbs vegetable oil or melted butter
- Extra of each melted butter, flour, cinnamon, and sugar

Directions
Pour water into large mixing bowl. Sprinkle in 2 tbs sugar and yeast. Stir until just combined, then let double in bulk, 5-10 minutes. Add 1/4 c. sugar, cinnamon, salt, and oil or butter. Stir until combined, then add flour, 1/2 c. at a time, until smooth ball forms. (If using a mixer, this is easy. If making entirely by hand, you'll have to switch from a spoon to using your hands at some point.)

Turn out onto floured surface and knead, 5-8 minutes, until smooth and springy. Oil a large ceramic bowl and put in dough, turning to coat in oil. Cover and let rise until doubled, 45-60 minutes.

Turn out and knead again, then form into loaf. Put in oiled loaf pan, cover again, and let rise again until doubled. Preheat oven to 400*F. Cut three lines diagonally across the top, brush with melted butter, and sprinkle on cinnamon and sugar. Bake 20-30 minutes, until golden and hollow-sounding.
