Help! I have a good friend who is vegan. I am a carnivor, but I do love my veggies. Tonight I want to make lemon chive potato salad. Im feeling summery. However, Im concerned about substituting mayo and milk for vegan friendly items. Anyone make a vegan-friendly potato salad?! Does substituint the appropriate items come out ok. The recipe I have also calls for sour cream, which we dont know what to use in place of that.
5 pounds medium red potatoes, cut into 1 1/2-inch chunks
salt
2 medium lemons
3 tablespoons olive oil
1 teaspoon sugar
3/4 cup light mayonnaise
1/2 cup milk
1/3 cup sour cream (low fat or non fat works fine)
5 large celery stalks, thinly sliced
1/2 cup chopped chives or green-onion tops
chopped chives for garnish
