Bistro SMAP is the happiest restaurant for me
It’s been 5 years since Bistro SMAP started.  From the standpoint of the owner and by looking at the 4 chefs, that kind of growth is amazing. I think whatever food is delicious, and in reality we ourselves think to the extent that we can put up a restaurant.

Everyone including me are of the same level in the beginning. All members almost can’t cook. Skillful things like cutting and grilling ingredients can be done by anyone to a certain extent with practice, hence, the chefs have developed a solid sense of taste in this 4 years, becoming a source of sense of taste is a sure thing, right?

I personally think it’s difficult to pursue that field. There’s also a bit of frustrating part. Not as an owner, I think it’s great if I choose myself as a chef now. In addition, cooking while looking at the recipe are basic things that I can’t do.
Even if tablespoon is written, I don’t have that measuring spoon in my home (laughs).

I can speak with wonderful guests as the owner. I like speaking to people by nature, I personally enjoy every time. I don’t particularly think of hospitality tricks, you know. Simply, suffice to say, it’s enjoying from the bottom of my heart the space and time with the guests. Perhaps that also connects to the guests who also enjoy themselves.

But, honestly, I sit on the chair the whole time chefs are cooking, doing the talk that I like. Chefs stand the whole time while cooking, the flavor, the condition of the fire etc., they continue until they complete the meal, they must continue to use their sensitivity.
As for me, I really apologize. And at the same time, I feel happy having encounters with wonderful guests and delicious food in Bistro SMAP.

I was in the plane bound for New York last year.

We were next to each other in the passageway, right?

But, I end up sleeping the moment I rode the plane.

And when we are about to land, I heard someone saying to the flight attendant...

"Otsure no hou wa..."

I was surprised! (laughs).

It's for promotion for the movie since they finished filming.

I think he became busy every day.

We need to take care of ourselves since we are of the same age.

And also, I want him to work very hard in whatever thing like he always does.

By the way, I participated in Yankees Championship parade in New York.

On the contrary, Nakai-kun was envious of this, right? (laughs).

Yankees fans know that I'm a Japanese, so when they all gathered up, they shouted "Matsui! Matsui! Everyone got really excited.

I think if Nakai-kun was here, tension's gonna be all up for sure.
