Indian style pumpkin soup
Ingredients:
2 yellow onions
1/2 tbs ginger/garlic -paste
1 tsp Nomu Indian spice mix
1/2 l of pumpkin (White boer, but anything tasty should be good)
some cheese
natural youghurt
salt and pepper to taste
Felt a bit lazy and needed some comfort-food. Luckily I found some pulped White Boer (pumpkin, not SA -resident) from the freezer. So, fried the onions, added ginger/garlic -paste and spices (couldn't bother to make my own masala, but Nomu's stuff is pretty good). In with the pumpkin, when it had melted, added some cheese to add richness, seasoned with salt and black pepper. As the onion and pumpkin makes a bit sweet combination, I added some natural youghurt (forget the 0% fat -stuff)when serving.
Pretty much the best soup I have tasted in a while.
