We got a beef tongue the other day!
Yes, I washed the piss out of this before I cooked it.
I love the texture of the taste buds and pokey bits!
This tongue was huge. Unfolded, it was probably about as long as my forearm.
Boilin' the tongue. After I boiled and peeled it, I braised it a bit in some epic braising liquid. The water in that picture is low because I took it out to make mashed potatoes with. Woot! We also had steamed broccoli with our tongue. It was *delicious* and a half. It had a gentle beef flavor and really picked up the flavors of the onion, garlic and mushrooms it was braising with.
We had a good chunk leftover, so today I am making tongue tacos! I am currently cooking chunks of tongue with cilantro sauce for maximum noms. Hopefully the tacos will be yummy! We made liver tacos not too long ago, and they were epic. Seth even grilled the liver. Omg.
Moral of the story: offal fucking rocks.
